Bring the juice of one lemon to the boil with 100 ml of water and season well with salt and Tabasco. Add bulgur, stir, remove from heat, cover and allow to soak.
Halve and core the tomatoes so that the salad doesn`t get too mushy. Quarter and core the peppers, peel and core the cucumber and cut into 1 cm cubes. Cut the spring onions (only the green ones) into small rings. Pluck parsley and mint and chop finely.
Mix everything, season with oil, salt and Tabasco.
