Rub the boiled beef with salt and pepper. Bring the beef stock, wine, bay leaves, peppercorns and onions to the boil. Carefully add the boiled beef to the stock. Bring to the boil once, skim off any foam that may have formed. Put the lid on the roaster and in the oven. Cook on the 2nd rack from the bottom for 3 hours. Halfway through the cooking time, carefully turn the meat once.
