Divide the broccoli into small florets. Cook ribbon noodles according to package instructions. 3 minutes before the end of the cooking time, add the broccoli tubes and cook for 3 minutes. Drain together and put off.
For the sauce, mix the vegetable stock with the peanut cream, coconut milk, soy sauce, brown sugar and sambal oelek, heat and let simmer for a few minutes. Season to taste with salt and lime juice.
Add the sauce to the ribbon noodles and serve sprinkled with chopped parsley.
