Instructions

  1. Cook the tagliatelle in salted water.
  2. Meanwhile, fry half an onion and a pinch of garlic in butter. When the onion is golden yellow, add the cream and milk, heat, and then stir in the crème fraîche. Then add the tomato paste and a dash of ketchup, bring to the boil. The sauce should be thick if it is too thin to add a little sauce thickener. Season to taste with salt and pepper and then toss the cooked ribbon noodles in the sauce. Stir in the washed rocket (amount as you like) and later, when the pasta is on the plates, sprinkle with parmesan.
