Make the pudding according to the instructions on the packet with milk, vanilla pulp and 50g sugar. Beat the egg white with the salt until stiff, briefly stir in the remaining sugar and sweetener. Mix the quark with the pudding and fold in the egg white.
Line a glass mold (25 x 20 cm) with half of the ladyfingers. Mix the espresso with the amaretto, drizzle with the ladyfingers, brush with pudding cream, repeat the layers and dust with cocoa.
Chill in the refrigerator overnight.
