Roll out the tarte flambée dough on the oven tray. Season the sour cream with plenty of thyme and rosemary as well as salt and pepper. Mix in the garlic and spread the mixture on the dough.
Cut the feta into slices or crumble it into small pieces and distribute evenly on top. Put about 2 - 3 tablespoons of liquid honey on top. Season with chilli flakes. Cut the aubergine into thin slices and place on top. Scatter the pine nuts on top.
Bake the tarte flambée in the oven at approx. 180 degrees until the base and the feta are colored (approx. 15 minutes). Spread some honey-mustard sauce on the tarte flambée. If you like, you can also use arugula as a topping.
