Clean the cauliflower and grate or chop it to the size of a grain of rice with a grater or a food processor. Put aside.
Sear the chicken breast in a pan, add the leek and carrots and continue to fry briefly while stirring. Add soy sauce, pepper and fry for about 5 minutes. Salt is not needed in my opinion.
Add the grated cauliflower and fry for another 2-3 minutes.
Push the meat and vegetables to the edge of the pan so that there is a free space of approx. Dia arises. Mix the eggs, season with salt and pepper and add to the pan. Let the egg set while stirring and then mix with the vegetables and meat. Season with soy sauce, salt and pepper. Sprinkle with sesame seeds, stir and serve hot.
