Instructions

  1. Cut the meat into very fine cubes with a sharp knife and set aside.
  2. In a cold bowl, mix the egg yolks well with the mustard, Worcestershire sauce, Tabasco, salt and pepper. Add shallots, gherkins, capers and chopped parsley and mix well again. Now add the meat and olive oil and mix everything well.
  3. Season to taste and serve with French fries, baguette or black bread.
