Preheat the oven to approx. 200 ° C top / bottom heat.
Cut the puff pastry into approx. 16 pieces and brush one side with water. Dip the wet side in sugar.
Bake the puff pastry pieces with the sugar side up for about 13 - 15 minutes until golden yellow (depending on the oven, so check every now and then that they don`t get too brown). Let cool down.
Melt the couverture. Whip the cream lightly and add the paradise cream. Mix into a smooth cream.
Spread the cream on the unsweetened side and dip the cream side in the couverture. Let dry.
