Brush off Teltower turnips, carrots and radishes that are not too large, remove the stems. Clean the spring onion and peel the potato. Cut everything into slices max. 2 mm thick. Roughly chop the fresh turnip leaves and slice the garlic.
Sweat everything with a little butter or clarified butter and add a little wine and vegetable stock. Since it is intended as a vegetable, do not add too much liquid. Season to taste with salt, pepper and tarragon.
Stew for approx. 5 - 10 minutes. It should still have bite, but the potato must be soft. Parsley and butter over it and serve.
I prefer meatballs or a mild bratwurst, no potatoes (it`s already included). If you leave out the potato, mashed potatoes will fit. The vegetables just taste that way.
