- Put the egg yolks in a narrow bowl and stir with a whisk or hand mixer until frothy until it is light in color.
- Now the oil is added drop by drop (this is very important), stirring constantly, until the oil is used up and a firm mayonnaise is formed.
- Put the mayonnaise in a larger bowl, mix with the mustard and cucumber water. Mix the Leberkäse and the cucumber with the mayonnaise.
