The main ingredient of the dish is the unripe, green papaya. The result is not a fruit salad, but a very tangy, hearty salad.
It is best to work with a mortar.
Coarsely mash the garlic, chiles and long beans in a mortar. Add papaya and roughly mash. Add the dried shrimp, fish sauce, lime juice and palm sugar and continue to mortar. Add the tomatoes and roughly mash them. Add the peanuts and season again with lime juice and palm sugar.
Serve with sticky rice.
PS: I mostly replace long beans with grated carrots. I also don`t always add the dried shrimp to the salad, it tastes good without it.
