Put the oil in a wok or in a normal pan, let it warm up and add the garlic and onion. Stir well until both are done, then add the chicken.
When the chicken is well seared, add all the sauces and the vegetable or chicken stock or the water. Finally add the spring onions, the fresh and the dried chillies and the sugar.
At the very end, add the cashew nuts. Bring to the boil again and then best serve with rice.
