Rub the chicken with olive oil and only then massage in half of the salt.
Mix a bundle of thyme with the rest of the salt and stick it in the chicken. Chop half of the second thyme bundle, pour over the chicken and place in a saucepan. Place the halved tomatoes, onions and garlic next to it, pour in half of the wine.
Preheat the stove to 180 degrees with convection, leave the chicken in the stove for 10 minutes at this temperature, then switch it down to 160 degrees and leave it in the stove for at least 1 hour (testing).
In between, pour over the rest of the wine and the juices that have formed.
You don`t need any extra sauce. Wine, gravy and vegetables turn into a spicy sauce on their own.
