Instructions

  1. Roughly chop the tomatoes and peppers.
  2. Finely chop the onion and garlic. Fry these in hot oil until they get some color. Then add the tomato and pepper pieces. Let everything simmer for about 5 minutes, until the vegetables start to disintegrate. As soon as it starts to settle on the bottom of the pot, add the vegetable stock. Let the soup simmer again, about 10 minutes.
  3. Then add the crumbled feta, stir and puree everything. Then season the soup with ajvar, the spices and the herbs.
  4. When it comes to the quantities of broth, I`m not entirely sure, if necessary take more or less. Depending on the taste and the desired smoothness, as well as how long you let everything simmer and how much liquid has already boiled away.
