Wash the tomatoes, cut them in half, remove the stalk and cut into narrow pieces. Wash the rocket and spin dry (I always remove the bottom piece of the stems because they don`t taste really good), then cut into strips and add to the tomatoes.
Make a salad dressing from vinegar, sugar, salt and pepper, season to taste and finally stir in the olive oil. Mix everything well with the tomatoes and rocket and serve.
We like to eat this salad in summer; either with baguette or for a barbecue evening.
