Wash the zucchini and cut into bite-sized cubes, as well as the peppers. Finely chop the onion and then fry it in a saucepan or pan. Once that`s done, add the zucchini and peppers.
Fry for about 15 minutes, until the vegetables are crispy and cooked through. Add the tomato paste and stir. Finally, just season with salt and pepper.
Tip: Add the salt at the very end, otherwise it will draw out too much water and will not taste so good.
