Rinse the mint and parsley, shake dry and also cut finely.
Brew and peel the tomatoes, then cut them into small pieces as well.
Mix tomatoes, mint, parsley, onions, salt and pepper in a bowl. Add flour until it becomes soft. Shape the mixture into dumplings. Heat the oil in a pan and add the dumplings to the oil. Reduce the heat and let the dumplings brown on all sides. Serve hot.
Variation: If you like, you can add some grated cheese to the dough.
