Wash the tomatoes, mozzarella, basil and chilli pepper and peel the mango. Dice tomatoes, mango and mozzarella and place in a salad bowl.
Mix the soy sauce and white wine vinegar. Chop half of the basil and the chilli pepper and add to the dressing. Add the juice of half an orange and stir in the cane sugar. Now add the olive oil to the dressing and mix well. Then pour over the salad and mix in.
