Instructions

  1. Put the vegetable stock, tomato puree, tomato paste and ajvar in a large saucepan and bring to the boil. After boiling, turn the heat down to just below the boiling point. Season to taste with pepper and salt.
  2. In the meantime, peel the potatoes and cut them into small pieces. Then put these in the pot. Also put the minced meat in the pot and stir with a whisk so that only small pieces of minced meat stick together. Then cut the leek, onions and peppers into small pieces and add them to the pot. Finally, add the corn as well.
  3. Simmer for 20-30 minutes. The soup is ready when the potatoes are soft.
