Peel and squeeze the garlic. Mix the garlic with the tahini, lemon juice and 4 tablespoons of water to a smooth sauce.
Wash tomatoes, cut out stalks and roughly dice. Pluck the parsley from the stalks and roughly chop. Mix the tomatoes, parsley and sesame seeds together.
Mix the sesame sauce with the tomatoes just before serving.
