Wash the tomatoes and spring onions, cut them into cubes and place in a bowl.
Add the entire herb brine and about half of the brine. Coarsely mash the two sheep`s cheeses with a fork and add them to the tomatoes and spring onions. Finished! No seasoning necessary.
Ciabatta or white bread goes particularly well with it.
Another tip: Arrange the salad just before serving, as it draws a lot of water.
