- Wash and quarter the tomatoes, remove the stalk. Wash the peppers, remove the seeds and stalk and cut into eighths.
- Bring the tomatoes and peppers to the boil with the water, the stock and the spices and simmer for about 20 minutes on a low level.
- Pass through a sieve, return to the pot and briefly bring to the boil again. If necessary, thicken with a little starch mixed with a little water.
- Serve with basil.
