Let the puff pastry thaw a little. Cut tomatoes and olives into slices, oil the baking sheet (you can also use baking paper). Place the puff pastry on the tray with a slight overlap. Spread thinly with mustard. Then spread the cheese on top. Top with tomatoes and olives.
Put about 6 tablespoons of olive oil in a small bowl, squeeze in the garlic and stir. Spread the garlic oil over the tart. Finally, pour the thyme and pepper over it.
If you like, you can also top the tart with other ingredients, such as tuna, salami or fresh mushrooms.
Preheat the oven to 200 degrees and bake the tart for about 20-30 minutes.
