Instructions

  1. Peel the mango, remove the core and cut into 0.5 to 1 cm cubes, quarter or halve and core the cherry tomatoes depending on the size. Finely chop the shallots, cut the basil leaves into fine strips.
  2. Sear shallots and mango cubes in olive oil for 3-5 minutes, reduce the heat, add tomatoes and basil, season with coarse pepper from the mill, add peperoncini (whole or mashed) and sauté for another 3 minutes, season with a little salt if necessary.
  3. Depending on your preference, you can add a little ground star anise and / or crushed ginger root. I like to experiment with Indian spices - but caution is advised, as they are sometimes very intense. This is a spontaneous creation of mine.
