Instructions

  1. Halve the tomatoes, place them in the baking tray with the cut surface facing up, season with salt, pepper and sprinkle with cayenne pepper.
  2. Mix the baking flour with 1 tablespoon butter and place on the tomato halves.
  3. Melt the remaining butter in a small saucepan, add the mustard, Tabasco, Worcestershire sauce, sugar, vinegar and a little salt and heat. Beat the egg yolks and add some of the hot vinegar mixture, then pour into the saucepan to the vinegar mixture and heat, stirring constantly, until the sauce thickens.
  4. Bake the tomatoes under the grill until the crumbs have turned brown. Put a spoonful of sauce on each tomato half and serve.
