First cut the tomatoes into thin slices and best slice the onion. Then stir the herb quark well and pour it into the center of a plate. Cover this mountain of quark completely with tomato slices, then cover the tomatoes with the onion slices. Repeat this so that you have two layers of tomato and onion each.
Drizzle with good olive oil and then with vinegar. Season with salt and pepper from the mill, drizzle with honey and serve garnished with basil and oregano.
