Wash the peppers, tomatoes and leeks, cut them into small pieces and place in a baking dish. Mix the soy cream with 2 tablespoons of breadcrumbs, a little salt and the herbs (amount as desired, not too much rosemary) and pour over the vegetables. Stir briefly so that all ingredients are moist. Then sprinkle with 1 tablespoon breadcrumbs and place in the oven for 6 minutes, then stir briefly and sprinkle with breadcrumbs again and place in the oven for another 6 minutes. Then sprinkle with cheese and bake for 10-15 minutes, until the cheese has melted nicely and is starting to turn brown.
Baked bread, rice or potatoes go well with it.
Tip:
If you want a little more sauce, you can use more cream and breadcrumbs.
