Cut the tomatoes into approx. 5 mm thick slices and place on a serving plate. Lightly salt and pepper, brush with the garlic mayo and sprinkle with finely grated cheese. Decorate with parsley and serve immediately.
Tip: I prepare the garlic mayo the day before and let it steep in the refrigerator, then stir again before brushing. The mayo in this recipe can also be replaced with crème fraîche, but garlic is a must.
