- Wash tomatoes and cut off a lid on the smooth side. Hollow out with a small spoon.
- Drain the tuna. Finely chop shallots and sauté in butter until soft. Puree with the tuna in a blender.
- Finely chop the parsley, mix with the mayonnaise and sherry. Salt, pepper strongly, fill into the tomatoes. Put the lids on it.
