  1. Bring the cream, milk and the ground tonka beans to the boil with 40 g of sugar. Beat 50 g sugar with egg yolk until frothy. Add the cream / milk mixture and beat over a water bath until the mixture becomes creamy. Let cool and freeze in the ice cream maker.
