Cook the tortellini according to the instructions on the packet.
Briefly fry the boiled ham in butter in a deep pan, then add 400 ml of the cream and simmer on a low level. When the tortellini are done, add them to the pan with the cream of the ham and continue to simmer.
In the meantime, mix the egg yolks with the parmesan, nutmeg, salt and the remaining 200 ml of cream in a small bowl, then add this to the pan with the tortellini and simmer until the sauce becomes thick. Serve immediately.
Very substantial, but the taste is fantastic. Now and then you can treat yourself to it.
