Instructions

  1. Boil the tortellini just under cooked and set aside.
  2. Peel and finely dice the onion. Cut the cheese into larger cubes. Roughly chop the walnuts, cut the chives into rolls.
  3. Heat the fat in a pan. Steam the onion cubes and walnuts in it over a mild heat until translucent. Add the gorgonzola cubes and sauté briefly. Top up with vegetable stock and reduce while stirring until the cheese has melted. Stir in the whipped cream and let it boil down for approx. 6-7 minutes. Add the tortellini to the sauce. Heat, season with salt, pepper and sprinkle with chives and serve immediately.
