Prepare ingredients.
Knead the dough from flour, eggs, a pinch of salt and a couple of tablespoons of olive oil, roll into a ball, cover with a towel and set aside for an hour.
Then melt a couple of tablespoons of butter in a frying pan and fry the meat.
Then turn this meat in a food processor, adding mortadella, ham, egg and a little parmesan.
Season the mixture with salt, pepper and add nutmeg.
Take out the dough and roll it out thinly and cut out circles with a diameter of 4 cm.
Put a spoonful of minced meat on each circle, moisten the edges with milk or water and close up, having previously formed a crescent, the corners of which are connected to make a ring or a bud.
Put the broth on the fire, bring to a boil, add tortellini and simmer for 4-5 minutes over low heat.
Serve the finished dish with broth, sprinkle generously with parmesan and herbs.
