Cut the ham into narrow strips and fry them in a saucepan with the butter. After approx. 2 minutes add the mascarpone and let it melt briefly. Then deglaze with the cream and make sure that the mascarpone is completely combined with the cream. Salt well and add the parmesan. Lower the temperature
When the Parmesan is combined with the sauce, add the tortellini (without cooking them) to the sauce and heat for approx. 4 minutes. Finally, season to taste with freshly grated nutmeg.
Place the tortellini on plates and sprinkle with coarsely ground black pepper and dried parsley.
