In the meantime, cut the peppers into very small cubes and wash the lamb`s lettuce. Lightly toast the pine nuts in a pan. Prepare a light dressing with oil, vinegar, salt and pepper.
After the tortellini have cooled down (I sometimes scare them off with cold water, then it goes faster), mix all the ingredients together.
Tip: You can also prepare the salad a day in advance. Then on the actual day of consumption just add the lamb`s lettuce and dressing shortly before.
The salad is the first to go at every celebration.
