- Cook the tortellini in plenty of salted water.
- Cut the mozzarella into small cubes. Finely chop the onion, cut the zucchini into small cubes. Pluck the basil from the stems, wash and dry.
- Put the pasta, mozzarella, onion, zucchini and basil (save some leaves for decoration) in a bowl.
- Mix the mustard, tomato paste, red wine vinegar, olive oil, salt and pepper into a marinade and pour over the salad.
- Let the salad stand for 15 minutes and sprinkle with the remaining basil leaves.
