In a pan, cook the beans with oil (fry them on a medium heat), then add the young garlic, roast and season with salt.
Whisk the eggs in a large bowl and season with salt and pepper. Add the beans with the garlic, without the oil, to the eggs in the bowl (please not the other way around) and stir well. Put the contents of the bowl in the not too hot pan with the remaining olive oil and stir. Then block one side and let the color take. Place a suitable plate on top and turn the pan with the plate on top of the tortilla. Slide the tortilla off the plate back into the pan and fry the second side. Bring something into shape.
Roasting takes about 2 to 3 minutes on each side.
If you want, you can fry a few cubes of bacon with the beans.
Serve the tortilla with a piece of fresh baguette.
