Cut the apples into thin slices with a sharp knife and cut out the core. Lay out on baking paper and leave to dry in the oven at 90-100 degrees for about 30 minutes.
Wash the rocket and spread it on a large flat serving plate. Lay out the apple slices.
For the dressing, mix together honey, balsamic vinegar, salt and olive oil as required. Drizzle over the salad. Place a piece of goat cheese camembert on each of the apple rings.
Release the pomegranate seeds and pour over the salad. Grind the coarse pepper fresh on top and serve.
