Chop up the 2 bars of chocolate and put about 1/3 of them to one side.
Put the butter, white and brown sugar in a bowl and stir well. Then add each egg individually and stir in for about 1 minute. Then add the vanilla extract and the salt and stir.
Mix the flour, cocoa powder and baking soda and place in a mixing bowl. Stir until it becomes a sticky mass. Add the 2/3 crushed chocolate and stir again briefly so that it has spread out.
Turn on the oven (approx. 150 ° C - 175 ° C, you can see it after the 1st cookies).
Spread the dough by hand in portions on a wire rack lined with baking paper (with a little space, as the cookies are still rising). Before everything goes into the oven, spread a little of the chocolate that was put back on top (approx. 2-4 pieces depending on size). Put in the oven for about 8-10 minutes.
The first batch of cookies usually burns. Happened and it doesn`t matter, you can still eat them. Simply turn the oven down a little.
Leave the cookies out of the oven on the baking paper until they have cooled down (otherwise they break easily.)
For me, this amount of dough makes about 12-14 cookies.
Tip: The be-all and end-all of this recipe is stirring. Better a minute too long than too short (works very well with a mixer).
