Line the bottom of the pan with wild garlic (50 g). Put the trout on top and brush the top with olive oil. Pepper and salt. Now fill the trout with plenty of wild garlic.
Cover the baking dish with aluminum foil and steam the trout in the oven for about an hour.
We ate the wild garlic from the filling as a vegetable, with potatoes with wild garlic butter and a green salad.
