Cut the turkey breast fillets into fine strips. Finely dice the onion. Fry the turkey strips and onion cubes together until the meat is cooked through. Drain the peach halves and collect the juice. Cut the peaches into wedges, add to the meat and fry briefly. Scatter curry powder over it, let it sweat for a moment. Deglaze with vegetable stock. Add coconut milk. Season with salt, pepper and peach juice to taste. Possibly Thicken the sauce with sauce thickener or starch.
