Peel the carrots and cook for 15 minutes so that they are a little soft.
Cut the turkey schnitzel into small strips and fry in oil. Set aside in a small bowl. Then cut the onions into small pieces. Cut the carrots into slices and the leek into half rings.
Fry the onions in a pan. Add the fried turkey strips, carrots and leek. Sweat everything and season with salt and pepper. Add the tomato paste and flour and mix. Then add the milk, cream and stock, stir everything well and bring to the boil. Finally add some chopped chives. Simmer slowly for a good 15 minutes. If the sauce is too runny, just add a little more flour, but the simmer will still attract it.
