For the marinade, mix together oil, wine, spices, herbs and crushed garlic. Pour over the meat and refrigerate for an hour.
Clean the mushrooms, peel off the shallots. Remove the meat from the marinade. Wrap each cube with a piece of bacon, stick alternately with mushrooms and shallots on 6 skewers and grill for about 15 to 20 minutes.
For the sauce, finely dice the peeled garlic and onions and sauté in the hot oil. Add tomatoes with juice and marinade, season with salt and pepper, let boil down for 10 minutes.
