Salt and pepper the turkey legs and brush with mustard
Place in the roasting pan and add a little oil. Quarter the orange, onions and apple and place in the roaster. Add the spices, put the lid on and cook in the oven for about 2 hours.
Take the legs out of the roaster and keep warm. Remove juniper berries, bay leaves and orange. Season the sauce to taste. Depending on the amount of sauce you want, you can add about 100 ml of water and a teaspoon of vegetable stock. For me, however, it was enough.
Briefly puree the sauce with the hand blender and serve with the legs.
