Prepare the rice according to the instructions on the packet.
Cut the meat into thin strips and fry in a little oil in a wok. Add the coconut milk, simmer gently for a few minutes and season with salt and chilli sauce. Tip: Season a little hotter than desired, the tangerines make the whole thing sweeter.
Just before serving, add the Thai basil and the drained mandarins, let them get hot and serve immediately with the rice.
