Cut the meat into bite-sized pieces and fry in hot oil. Chop the onions into large pieces and finely chop the garlic. Add to the meat and sweat.
Deglaze with red wine and stock. Add the remaining ingredients and season with salt, pepper and paprika powder. Let everything simmer on a low flame for about 15-20 minutes.
Season to taste with a few squirts of lemon juice and, if necessary, thicken with a little sauce thickener.
