Mix the grated parmesan and breadcrumbs together. Beat the turkey schnitzel, season with salt and pepper, turn in the beaten eggs and then in the breading mixture, set aside.
Cut the vegetables into small pieces. Sauté the onions and garlic in a little oil. First add the peppers then the zucchini, fry. Then add the tomatoes and corn and fry everything, stirring constantly. Add tomato paste and season everything well.
Fry the schnitzel in a little oil until crispy and golden brown. Stir the crumbled feta into the vegetables and serve everything.
