In a large pan, fry the turkey schnitzel in clarified butter for about 2 minutes on each side and season with pepper. Remove turkey schnitzel from the pan. Roughly wipe the pan with kitchen paper. Heat the oil in the pan and fry the chopped onion in it until translucent. Add the tomatoes with the liquid. Add bay leaf, salt, pepper and thyme. Boil everything down open.
Place the turkey schnitzel in the tomato sauce. Place the mozzarella in slices on top. Cover the pan and let the cheese melt in about five minutes over the lowest heat or bake in the preheated oven.
