Instructions

  1. Boil the potatoes with their skin on. Add the peeled garlic cloves to the potatoes and let them cook. In the meantime, peel the onion and cut into large cubes (by no means too small!).
  2. Drain the potatoes and let them cool down briefly. Peeling.
  3. Heat 3 tablespoons of olive oil in a large saucepan and sauté the onions until translucent. Add the tomato paste and sauté. Gradually add the potatoes and fold in with a spoon, mashing them. Gradually add the olive oil and stir in. The potato mixture should still contain pieces of potato and not be too finely mashed. Season to taste with salt and pepper.
  4. A perfect side dish for grilling or roasted meat.
  5. If you want to make a vegetarian main meal out of it, you can leave the mashed potatoes in the pot and use a spoon to form hollows into which an egg is beaten. Then close the lid and let the egg set to the desired hardness.
